Braised Red Cabbage

2 tbsp. oil
1 tsp. granulated sugar
1 pinch salt
2 tbsp. balsamic vinegar
1/3 cup cider
1/2 head red cabbage
1/2 apple
2 or 3 tbsp. red currant jelly
Start in a heavy pot with a few tablespoons of oil. Add a teaspoon of
granulated sugar, a pinch of salt, two tablespoons of balsamic vinegar
and third cup of cider. Stir it all up, then slide in half a head of
red cabbage that's been sliced. Stir it up to coat all the cabbage.
Cover, and lower the flame to a simmer and cook for about 35 to 45
minutes. Check the pot occasionally to be sure things are on track.
If the mix appears dry, add another tablespoon or two of cider. When
the cabbage is nicely wilted, add half an apple you've peeled and
grated and two or three tablespoons of red currant jelly. Stir it up,
cover, and simmer an additional ten minutes. Serve this braised red
cabbage with a smoked pork chop, or any other hearty main course.
