Chinese BBQ chicken

Chicken pieces
Marinade sauce
Carmel color
Red food color #25 or darker
Use the marinade recipe from the BBQ ribs (link to Dale's Authentic
Chinese Recipes). But omit the rice wine or pale sherry, and add a few
drops of Carmel color and some red food color #25 or darker. This will
give a nice red color when cooking this on your grill.
In a large pot cook chicken in water until white on inside and out.
But don't over cook or it will fall of the bone.
When chicken is done add to marinade and mix then put on your hot
grill, and cook turning often so the marinade wonít scorch then with
a BBQ brush add more marinade and cook until the marinade is glazed
in texture. Serve with some Chinese dipping sauce also found on the
bottom of the BBQ rib page. Enjoy
