Egg Rolls

Egg roll papers - look for at your store
Chow mien cooled and chopped
Egg wash
Deep fry batter. Found on this web site.

You can use chicken, shrimp, scallops, pork or just veggie.
After cooking spread out taking a large knife and chop a bit finer
let cool. Take egg role paper and place with the corners top &
bottom place a spoon or two of your chow mien in the center, then
fold the left and right corners together then brush with egg wash
then do the same with the top and bottom corners brush with egg wash
and set aside with the washed side up. Continue until you have that
amount you need. Heat your deep fryer or wok until the oil is 350*
to 375* If using wok please be very careful and watch the temp of
your oil. Fry each egg roll for about a minute and remove, cool this
is to seal the egg roll. When cool, dip each roll in to the batter
and fry for about 4 to 5 min or until they are a nice golden brown.
Serve with Chinese red sauce and hot mustard add a few sesame seeds
on the side for decoration.
