Grilled Prime Rib

Recipe by: Cooks Online - Overton Anderson

Prep time:

Serves:

I'd put the rib roast on a rack in or above a drip pan; put well lit charcoal around the outside; put some liquid in the drip pan to prevent scorching; cook about 10 to 15 minutes per pound of roast; check with an instant reading meat thermometer after 8 to 10 minutes per pound and remove to rest for 15 to 30 minutes after the thermometer reads about 125 to 130 F. The temp will rise another 5 to 10 degrees with resting. Use drippings for a sauce.

BTW, have the butcher remove short ribs and chine bone so you can carve easier.

Bless us oh lord, for these gifts which we are about to receive, from thy bounty, through Christ our Lord. Amen. Visit Hickory Works!
