Scallops Single Malt

Prep time:

Serves: 4

450 g Queen Scallops
140ml Fish or Chicken Stock
125g Butter
30ml fresh chopped Parsley
30ml single Malt Whiskey
40g fine oatmeal

Poach scallops in the stock for 3-4 minutes until just tender. Drain and transfer to individual dishes. Melt the butter in a small pan, stir in the parsley, whiskey and 25g of the oatmeal. Cook gently for 1-2 minutes. Pour the sauce over the scallops, sprinkle remaining oatmeal and cook under a hot grill until golden.
