The Shack Barbeque Sauce

Serves:

6 Tbsp chili powder
6 Tbsp pepper, black
6 Tbsp salt
4 cup catsup
4 cup vinegar, white
4 cup water
1 ea onion, large, minced

Combine chili powder, pepper and salt. In a large saucepan, combine catsup, vinegar, water and onion. Stir in dry mixture. Bring to a rolling boil, reduce heat and cook uncovered 1 1/2 hours, stirring every 10 minutes. The mixture will reduce almost to half, about 55 ounces. Pour into sterilized jars and let rest for a few days. (The Shack was a BBQ spot in Little Rock for a number of years.)
